This aromatic orange wine uses whole-bunch Muscat for floral lift and de-stemmed fruit for depth, resulting in a perfectly balanced grip. It undergoes a three-week maceration and regular lees stirring to create a textural, mineral-driven finish.

Project 108 is the "zero-zero" workshop of Paul Old, who moved from Australia to the Languedoc to preserve the region's historic old vines. While his main estate, Les Clos Perdus, is biodynamically certified, Project 108 is his experimental space where he follows a strict "leave it" rule—adding absolutely nothing and letting the fruit speak for itself.

Paul’s approach has evolved into a no-till philosophy that prioritises soil microbiology, using compost teas and algae instead of traditional copper sprays. Each year, the vessels and maceration times change based on the vintage, making every release a unique snapshot of the vineyard's health and the season's character.
