Noita are an Epic Urban winery from Finland using only 100% hand harvested organic grapes from Austria. Low intervention, all natural, all delicious wines. They approach wine production with as much respect as the organic growers do. With as low an intervention as possible, they sort, crush, macerate and press the grapes and allow them to spontaneously ferment with their own native yeasts.
In case you're interested, urban winemaking moves the production of wine into cooler climates and urban locations, whilst fostering prosperous relationships with grape growers. It also gives the winemakers enormous flexibility, allowing them to harvest grapes from multiple growers and blend a wine based on what's tasting great at the time. We think that's kind of cool and means that there are endless possibilities to what wines will come in the future.
