The Grenache Gris is left on its skins to provide a beautiful copper hue and a salty mineral edge, while the Viognier is pressed directly to maintain freshness. It is a collaborative cuvée made using fruit from neighbouring organic growers, fermented entirely with indigenous yeasts.

Based in Rivesaltes, Laurent Roger and Melissa Ingrand named their project Mataburro ("Donkey Killer") after a local railway legend from 1910. Laurent, a former sommelier at the famed Paris wine bar Le Verre Volé, returned to his family’s land to farm three hectares of old vines planted by his grandfather.

The duo follows the Fukuoka method of "do-nothing" farming, avoiding ploughing to preserve the delicate fungal networks in the soil. Their wines are renowned for their incredible lightness and energy, a style Laurent perfected while studying under the legendary natural winemaker Alain Castex.
