The red-skinned Cabernet Cortis was macerated for two days in a closed vessel before being pressed and co-fermented with the white grapes in stainless steel using wild yeasts. Racked off its gross lees to prevent any gushing when opened, this gossamer-light sparkler completes its fermentation directly in the bottle to create foaming, mouth-filling bubbles.
