This pétillant naturel is crafted using the ancestral method, where the wine is bottled before the primary fermentation finishes to trap natural carbon dioxide. It is bottled without filtration or added sulphites, and sat on lees for 12 months.  The result is a beautifully cloudy, raw sparkling wine that prioritises fresh fruit and a lively, frothy mousse.

Domaine Ricardelle de Lautrec is situated at the historic crossroads of the Clape, Minervois, and Corbières terroirs in the Aude region.

The estate has been in the Boutié family since 1999, when Lionel Boutié took the bold step of converting the entire 50-hectare vineyard to organic methods, later progressing to full biodynamic farming. The vines thrive in ancient alluvial soils near Narbonne, where the Mediterranean breeze helps maintain the health and purity of the fruit.
