A blend of three different vintages — 2021, 2022 and 2023 — of 100% spontaneously fermented beer.
Jester King's goal is to make beer inextricably linked to time, place, and people by harnessing the microflora, climate, and ecology of the Texas Hill Country.
This is their eighth three year blend release, with the first coming out in 2016. SPON Three Year Blend has remained remarkably consistent over the years in terms of its recipe and process. Brewed with local well water, Texas-grown malted barley and raw wheat, and whole leaf hops aged in their barn.
Fermented 100% spontaneously (no yeast pitched) in oak barrels after the wort first rests and cools down overnight in a coolship, capturing wild yeast from the air. After a slow, patient fermentation and maturation, a blend from across the years is produced and bottle conditioned.
The finished beer has a unique connection to a time, place, and people — specifically, the coldest months of the year, the Texas Hill Country, and the people of Jester King.
