This beer was fermented in foeder (5000 litre wooden barrel) for 8 weeks and then then lagered and carbonated in tank for 8 weeks. Hopped and dry hopped with Goldings.
The fermentation in wood gives a lovely roundness to the beer – this is full and creamy in texture. The flavours coming through are remarkably clear in the manner of a classic lager, with the Goldings bringing lemon pith, hay, sunshine into play. A touch of honeyed sweetness, enough bitterness to balance. As the foeder has been home to mixed culture fermentation saisons in the past, some of those wild yeast characteristics are present at low levels in this beer, lending a background of hay, low level of fruit & funk – more present in the aroma than the flavour.
