The Kernel Foeder Lager 330ml (4.8%)

This beer was fermented in foeder (5000 litre wooden barrel) for 6 weeks and then then lagered and carbonated in tank for 6 weeks. Hopped and dry hopped with Tettnang. The fermentation in wood seems to give a lovely roundness to the texture, and as the foeder has been home to our mixed culture fermentation saisons in the past, some of those wild yeast characteristics are present at low levels in the beers. Whereas the first batch we made of this beer leaned towards being a pretty clean and straight lager, this one has more foeder character - a little bretty, a touch of tartness, which makes the whole ensemble really interesting, while still retaining the gentle and drinkable characteristics of a lager.
