Laurent, a former sommelier at the famed Paris wine bar Le Verre Volé, returned to his family’s land to farm three hectares of old vines planted by his grandfather.\u003c\/p\u003e\n\n\u003cp\u003eThe duo follows the Fukuoka method of \"do-nothing\" farming, avoiding ploughing to preserve the delicate fungal networks in the soil.
