A mixed fermentation saison with spelt. A two barrel blend of blonde ale made from the ancient and independent grain, Spelt. This beer was fermented with a co-pitch of lab cultured wild yeast and bacteria before maturing in French oak for a period of 12 months. The aroma is a delicate intermingling of vanilla and coconut upfront that transitions into a firm lemon zest & lemon myrtle herbiness. The large percentage of spelt in this beer adds an incredible meringue-like creamy sweetness with the wild yeast and bacteria delivering a punchy apricot and lemon finish.
