The Quetsche Tilquin à l’ancienne (6.4% alc/vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums in young lambics, blended with 1, 2 and 3 years lambic to reach a final concentration of fruits of 260g fruit per litre.
Unfiltered and unpasteurized, it is re-fermented in the bottle. The lambics used were fermented and matured in Tilquins own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
Founded by Pierre Tilquin in early 2009, Gueuzerie Tilquin is a blendery in Bierghes, a borough of Rebecq located approximately 30 kilometers south-west of Brussels. Tilquin is the only lambic blendery in the mainly French-speaking, southern region of Wallonia. It opened its doors to the public in the summer of 2011.
