Tilquin Mure A L'Ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of blackberries (fruit ratio is 35% (kg/l) fruit per liter) in a blend of 1, 2 and 3 years old lambics for four months.
Unfiltered and unpasteurized, it is re-fermented in the bottle. The lambics used were fermented and matured in Tilquins own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.
Founded by Pierre Tilquin in early 2009, Gueuzerie Tilquin is a blendery in Bierghes, a borough of Rebecq located approximately 30 kilometers south-west of Brussels. Tilquin is the only lambic blendery in the mainly French-speaking, southern region of Wallonia. It opened its doors to the public in the summer of 2011.
